Cheese hors d'oeuvres de gerbils

Who knows cheese better than us gerbils? So, let's have 'em: list your favorite cheese-centric snacks.

Here's one that's perhaps my favorite:

Goat cheese on a rosemary cracker with honey dabbled on top and be totally surprised.
Also, try the same except with pepper jelly instead of honey. Amazing.

Cheese makes almost everything better! (except fish, they say)

1) I'm always looking for a good fried mozzarella. There are lots of crappy/frozen ones out there, and many restaurants serve crappy ones as well.

Where I grew up in the South Side of Chicago there are a ton of unique pizza places. Baracco's Pizza in Evergreen Park, Illinois, has a really good fried mozzarella with a really good marinara (also important to me).

The cheese used in their deep-dish is pretty good as well (gallery below)

2) Growing up, I have lots of fond memories of Wisconsin Cheeseman sets, where you can try a dozen cheeses with sausage slices/crackers, etc.

3) Another good Christmas treat is a Tastefully Simple cheese ball with apple slices

Honestly there isn't much of anything that I don't like if it has cheese on it. To keep it simple though, I often eat cubed cheese(I usually stick to a really sharp cheddar or something with jalapenos in it) on cracked pepper triscuits.

Around our house we love this one...

cracker of your choice (something as buttery as a Ritz or as simple as a saltine will work for the cracker, even pita or bagel chips work)+
good artisanal cheese of your choice (I like Humboldt Fog, or other smoky blue cheese)+
dried fruit of your choice ( mission figs or apricots are our favorites)+
couple of drops of balsamic reduction (make your own by simmering good balsamic until it is like honey)

...good thing I just had lunch, because otherwise I would be really hungry now. :D

One dish I like:
2-3 lbs cut up and diced broccoli.
1/2 cup or so of freshly shredded sharp cheddar.

Toss the broc in a little garlic (to taste) and roast about 10 minutes at 425. Coat lightly in cheddar, put back in for 3-5 minutes.
Frigging wonderful.

Or, just slice some good gouda and eat it on pear slices :D

Fresh broccoli, I assume? Living alone at the moment, I get most of my veggies frozen, but that sounds delicious....although...I could probably just bake the cheese onto my already-cooked broccoli and do just fine.

Frozen or fresh works, I just prefer roasted to steamed because of the differences in texture.

We get curds from Shullsburg with dill in them rather than horseradish, and I'm partial to the dill curds. *nom*

Man, cheese. I don't think I know anyone who doesn't like cheese.

My favorite is a slice of mozzarella, a slice of tomato, basil leaf and soaked in balsamic vinegar with a dash of soy sauce. A whole dish is gone in 15 minute in my household. My wife is a awesome cook and she comes up with cheese dishes that blows my mind.

Some of my other favorites is a swiss and bacon dip with any cracker. Also, there is the goat cheese and garlic on a slice of beard. Man, I can go on and on. :D

Yeah. I became intolerant about halfway through my 20's, but luckily cheese doesn't give me any problems unless I eat an extremely unhealthy amount. The amount of lactose in cheese is something like 0.07 - 0.35%, compared to 4.5 - 6.0% in most other dairy products.
