New NAS - setup recommendations?

Good day.

I just purchased a Synology DS712+ 2 disk NAS, I will putting in my WD 640GiB blacks in a Raid 1 mirror.

Basically it's going to store family photos, videos, etc. it will be on a new home network, 1 gig on cat6 cable.

My question(s) is there a recommended file system for the disks in a NAS (NTFS, fat32, other why)?
Should I use the latest version of DSM or are the older versions ok?

Anything else?

The NAS device will probably take care of formatting the disks itself once you have them installed.
