Hardware-wise, you've got a great setup chosen. Z68, an unlocked processor, and a 560Ti will be super-fast. You might be able to save a couple bucks on slightly slower RAM, but probably not more than $10, so I'm not going to worry about it. The PSU should be plenty for this system, though since your mobo supports SLI there's a chance you may want more PSU if you decide to go that way down the road.
That aside, my personal preference would be an ASUS Z68 board such as this P8Z68-V/GEN3
because ASUS has superior fan speed controls and a nicer UEFI interface. The Gigabyte will be fine, but the ASUS will keep it quieter. At the same price as the Gigabyte, ASUS has a plain P8Z68-V
with no gen-3 PCI-express slots. Not sure how much of a difference that will make in the next 3-4 years anyhow, because gen3 PCIe cards have to exist before it's useful. Both of these choices also support SLI.
For a cooler, I have a CoolerMaster Hyper 212+ as Dancin Jack does, and it has done a great job keeping cool and doing so quietly. There's a Hyper 212 EVO
that's a couple bucks more than the standard Hyper 212+, and the difference is the base is supposedly much flatter for better CPU contact. At $8 it's not a TON more, but it is a bit more.
