Setting up a dual boot, Win7 and Win8

Hi all,
I wanted to setup a dual boot of Windows 7 and 8 on my machine. I was planning on putting Win7 on one SSD and win8 on a second SSD.
What is the best way for me to go about this? I've never set up a dual-boot system before. My hope is to get Win8 working the way I want it to, and then transferring the hard drive to a new machine later when it's ready and working the way I want it to.
Is it as simple as popping in the DVD and creating a new install? How do I choose which drive to boot?
