If your keboard manufacturer does not provide a utility to map the special keys, you might try a program called
xbindkeys.
Whenever a key is pressed, a series of 'scancodes' is returned. The special keys should be accessible with the standard keyboard driver, but the OS does not know what to do once they are pressed. This program should allow you to find out the scancodes for the special keys, and then map them to a shell script. You will have to come up with the shell script yourself - things like volume controls may be tricky, if there is not a command line interface to access the functions, but launching apps should not be too difficult.
