Water is a very intense science. So many factors - you wouldn't believe it.

Get your water tested. You need to know if it's hard or soft. Then the levels of magnesium, calcium, and alkalinity ion concentrations.

The endzeit basically is you need a pH level that would make even Folder's coffee taste like the best coffee you ever drank.

I'm having an overcarbonated Coconut Porter (homebrew). It tried to climb out of the bottle when I opened it, and I only was able to get half of it poured into my glass due to the massive head.

Preparations for the DMC are going reasonably well, though between that and a crunch at work I'm not getting much sleep this week. Things that are currently making me crazy: bugs in Quartus II; bugs in BCOE&M; and beer judges who sign up or cancel 3 days before a competition!
Nostalgia isn't what it used to be.

Interesting double bock that's a world class example of the 5C style for sure! I still prefer the Augustiner Maximator over the Korbinian only because I prefer the intense sweet malty flavors and less bitterness.

This software I am familiar with... Most comps use it because it's open source, easy to install, setup, and use. I know a few local clubs around here that built their own competition software system (example: http://www.beerstofear.com/comphost/index.php ) ground up and a lot of people prefer it over the BCOEM.

Altera is a FPGA/DSP vendor. I'm wearing my "hardware guy" hat at work this month, attempting to design part of a custom digital video processing FPGA.

I suppose you could make a computerized brewing system that is partially controlled by FPGAs... :wink:

We welcome entries from anywhere. We do prefer our judges to be BJCP certified, or at least working towards passing the BJCP exam; spots for novice/apprentice judges fill up quickly because we need to maintain a reasonable ratio of BJCP to non-BJCP judges.

No problem. I am 3/4 into my BJCP class right now. By the time your comp comes up again next year, I should have my Apprentice/Recognized/Certified ranking.

I have judged 2 major (>1000 entries) competitions (Wizard of Saaz in Akron OH, and the Homebrew at the W.E.B. in Frankenmuth MI). I have about 5-6 flights of experience in a variety of cats (4, 7, 8, 19, and 21) so far. I have judged a mini-boss with the famous John Palmer too! :D

I also judge our COC for my homebrew club (C.R.A.F.T.) every month.

Yeah, if you've got your BJCP rank by next year (or even if you don't, as long as you're still serious about going for it...) come on down! We try to pair less experienced judges with Certified or National judges, so it's a learning experience.

We sometimes get a few judges from Michigan and Ohio. Do you know any of the guys in the Ann Arbor Brewers Guild?

Just a couple --- I was paired up with Jeff Rankert at the recent W.E.B. comp! I also know Fred Bonjour, who is the one teaching the BJCP class.

Lakefront Brewery (Milwaukee, Wisconsin) Fuel Cafe coffee stout. Still the best coffee stout I've found. Very hard to find though, even in Milwaukee/Madison area so it's a treat when I get some.

just wanna say i'm crunked after a COC beer testing event.. 10-20 beers. 10+ means, and various other sutffds., so gpood yum!

beers: dogfish palo wood, bardic wells meaderys (4-5 different meads), saugatauk neopolitan stout, dogfish pangaea. goose island lolita, homemeads oh my!


got some dorito taco's and other stuff ot keep me vbalanced yay

I'm feeling a little more depressed, now - (actually, I probably shouldn't joke about that :( ) - that everyone else manages to find far more interesting things to drink than I do.

Unfortunately, I don't like coffee, don't drink alcohol, and need to add far too much sweetener to tea to make it worthwhile, so I'm stuck with squash or sugar free pop/soda.

It's 15 parsecs to Kessel, we've replaced the negative power-coupling, it's dark and we're wearing welding goggles. Hit it.

It tastes OK, but the next item on the menu, Hopworks IPA, sound more appealing

The grinder is quite important. The electric spice grinders just smash the beans to bits and quite high local temperatures are generated. A hand driven, or if you want to spend a lot of money electric, grinding stone type grinder will crush the beans in a much more benign manner.

You can easily taste the difference.

Look for burr grinders.

Roasted beans, unground, lose something like 50% of their flavor after 30 days. Freezing actually makes things worse, because the oils get all pissy about it. You don't want to let ground bean sit for more than 5 minutes before you brew.

I have a good coffee shop that does it for me. I have a decent burr grinder, and a nice french press that I haven't used in over a year. I make my own tea, and am even more anal about that, but it's less time consuming, less expensive, and more difficult to find someone else to do it adequately.

Drinking Blue Moon with a slice of naval ORANGE!!!!!!! Not lemon<<<. I hate when people serve that with lemon, totally wrong.

I was curious is there a large difference in making coffee the normal way and a french press. I understand the basic concept behind it, I guess what I mean is, what sort of flavor difference does it have? Is it strong, weaker, brighter, what?

Has anyone tried the Shocktop "Wheat IPA". Seemed to me to be a totally bassakwards sort of thing, but was curious if its any good for those who have tried it. And if you tried it and liked (or hated) it.... What are your favorites that you'd compare it to?
