Yes, you can wipe Chrome OS and install Linux Mint. The only thing about C7 Chromebook is the below average battery life 3.5-4 hours.

so would it be any different from say a run of the mill lappy ? ( installing mint that is ) I am thinking of doing this . I have a 60gb ssd doing nothing but colecting dust . so I pick up a usb dvdrw and plug that in with a copy of linux mint 32bit

Perhaps not reading this: http://chromeos-cr48.blogspot.com/2012/11/looking-for-acer-c7-chrubuntu-tester.html. Had a CR48 Goggle sent me forgot I had to flash the BIOS to boot Windows/Linux. You would be stuck booting Ubuntu and unable to replace the hard disk looks like.
