Some console games can't even run at 1080p natively due to hardware limitations in latest consoles like Xbox One. Some consoles may be able to support higher res output (like "4k resolution") for non-gaming content such as movies but there is also no movie content currently available for such resolutions, except few "demo" movies for proprietary media players from Sony/Samsung. So you'll have to rely on whatever upconversion and aspect ratio adjustments your future TV may have (it may add black bars at the sides of the image when playing console games or whatever), at least for the next few years.

If I was gonna do that I might as well just replace my current monitor with LG's new 34" 21:9 1440p monitor for 500 bucks less than the TV would have cost me lol

Where can you find that monitor for 500$ ?? That's what LG sells there 29" 21:9 2560x1080 monitor for.
LG's 34" 34UM95 21:9 beauty running at 3440x1440 is around 1500$ unless you know something I do not, if so please share:)
LG also makes a 34" 34UM65 21:9 monitor that runs at the same resolution as the 29" model 2560x1080 and it costs around 880$.
