I got this HDMI to DVI-D adapter that just lets me connect the ps3 to my HDCP compliant computer monitor.

The problem is that the 1080p setting the ps3 outputs is 1920x1080 while the monitor is 1920x1200.
The picture is stretched out a bit vertically. Is there anyway I can change the aspect ratio on the PS3 so that it will have two black bars on the top and bottom or something like that so I won't have the distortion?

My monitor is the 24 inch Acer AL2416W.

Nope. Your only option is to go through the OSD on the monitor and see if you can change the scaling factor, preferably set it to map 1:1. (that's the setting on my 24" Dell monitor, I know that not all of them have that option though)

I understand the Xbox 360 can do this because of its onboard scaler chip. So it turns out that thing might be useful after all?

You probably want to use "Aspect" scaling on your monitor all of the time.

I don't think the xbox can do this. Well I take that back. It can output to 1280x1024, so I guess that is 'changing aspect ratio,' but I don't think it can display 1920x1080 pixels in a 1920x1200 output.

There is no such thing as a 16:10 aspect ratio on the PS3 or the 360, and after 3 years of bitching and MS not putting one in place, doubtful it'll ever happen. Also there is a guide on this:

It might with HDMI, but not with the VGA cable - you only get 16:9, 4:3, and 5:4 resolutions to choose from with that (ranging from 640x480 to 1366x768 to 1920x1080), and if it's a component cable you only get "real" HD resolutions like 720p and 1080p.

My PS3 actually had the picture going off the sides of my monitor when it was attached to my 205BW via the same input method (so the picture was full-height, but you lose the edges, how very weird). There's no way to select 16:10 on it though.
