Restoring an Exchange database can be tricky. The way of doing it I've had the most success with is when using Windows Server Backup to perform the backups themselves. How are you backing up and attempting to restore this DB?

I had an issue similar to this. The fix for me ended up being putting the wireless adapter into a USB 3 slot instead of a USB 2. Even though the adapter itself was not USB 3 I believe wireless networking can push the limits of the USB 2 interface in ways that are alleviated on USB 3.

That's a pretty massive amount of data. So much so it's hard to believe. A good place to start would be looking in Task Manager to see what your disk activity really looks like. You could even get fancy with it and setup some Performance Monitors to check every few minutes what state your disk is in...

I'll throw in on recommending Office 365. If you have Outlook 2010 or newer (2007 SP2 used to be supported, not sure if it still is or not) it's hard to recommend anything else. The time you save patching, updating, maintaining, etc makes up for the 4 dollar a user a month subscription charge.

After an hour on phone support with Citrix they don't know why it's happening either. I have a couple of things left to try, but it's looking like I'll be going back to iSCSI for the storage system. I'll give another update when there is something to say.
