I'd look into getting Klipsch Promedia 2.1's. I've had a lot of experience with these guys and the sound is unbeatable for the cost. As far as 5.1 goes... the space issue is more annoying that the benefits. Save yourself the headache and just go 2.1!

I'm 90% sure VRAM would have a more significant impact. System ram is rarely the bottleneck while running a game, but not having enough vram can drop FPS pretty dramatically.

It also matters which 570 or 7870 you are going with, a non-reputable brand that comes out to be cheaper may have an annoying fault (like an excessive loud fan or high failure rate). I really do not see the point in upgrading from a 470 though... what are you doing that would see a noticeable differ...

If I'm not mistaken you will need a sound card that supports Dolby Digital Live or DTS if you want to wire your HTPC to your receiver via toslink (much less messy than your alternatives) I couldn't find any cheap sound cards to link here, but many upper level cards come with these features.
