This is probably slightly more PC than you need, but gives you a little headroom in GPU without inflating the budget.

Dell Inspiron 15 7567 with 256 GB SSD and GTX 1050Ti for $749.

You should be able to play most anything out today at Medium to High settings at 1080p60.

If you're undecided between the 7820X ($599) and the 8700K ($399), have you considered the 7800X ($379)? You'll still pay more for the X299 platform than you would a Z370 motherboard, but the 7800X has 6 MB of L2 cache vs the 8700K which has 1.5 MB, although that may not make much difference for you...
