Yeah they really do. The whole "supertaster" thing is real. There's also a number of things which most people won't taste or smell at all, but a small percentage of the population will.

If you don't wash them first that might be because they still have dirt on them. :lol:

I was never really into mushrooms until started cooking more. A lot of people use them as a meat substitute, but I'm not really into that.

A forstner bit would work well also. They often give you a really clean hole, so the demons won't get snagged on any jagged skull bits on the way out.

Yeah, there's something about the drying process that really boosts the umami I guess. I wonder what the science behind that is... This is just a WAG, but drying out the mushrooms might concentrate their sodium content effectively making them more salty, and salt has a way of making food taste more...

Maitake mushrooms are good also. I usually put them on pizza, or toss them into a salad. They've got a nice, subtle flavor that's not overly mushroomy. I've seen people deep fry them also.
