Those 27" seem alright, I doubt my system could drive three of those, but it should be able to handle two. Is there any advantage of using something higher than a 60hz refresh? 2x 2560x1440 or 4K monitors are going to give you a lot more real estate then three 1920x1080 monitors. I have two 19...

It's been a while since I benchmarked FreeBSD. Time and dd are there in the base system, bonnie++ is in ports, and sysbench is in ports as well. Checkout /usr/ports/benchmarks or http://www.freshports.org/benchmarks/ for more tools.

Systemback is just a tarball on Sourceforge. You could untar it, and put the files where they need to go. This glosses over the step where you have figure out where it wants everything and fix any Debianisms they hardcoded in.
