Just wanted to let everyone know

That even tho I'm not active here on TR - I'm still worried/concerned about everyone here.

It's been 20 years since I first put my eyeballs on this place, and while I don't like the look of the new front page - it's still kind of home.

Take care of yourselves, stay safe. Learn to make Chili. :)

Go to seriouseats.com and grab their Texas Chile recipe. There's stovetop and Instant Pot versions.
What we have today is way too much pluribus and not enough unum.

I do have a question about that recipe: WTF is a "fresh dried chile"? Seems like an oxymoron.

Dried, but still pliable. If it's crumbly dry it's too far gone. You need to be able to open them up and remove the seeds and membranes without turning them into powder, especially since you then need to lightly toast them to bring out the oils.

A good pair of kitchen shears makes this job much easier.
What we have today is way too much pluribus and not enough unum.

A little diced raw onion or sliced green onion can be good too.

It's super cheap, filling and healthy. :)

Ned I've been experimenting with my own. I think I found an almost perfect recipe - basically chili with more cayenne, jalepenos and ... pork chops. Don't laugh that's great stuff. I prefer a pork chili than a beef one right now.

I'm planning on making 5 pounds of pulled pork this week. Not quite BBQ but close (crock pot).

Or some green onion, or leeks or ... the list is endless. Chili is a basic food group IMO.

It's yummy.

I've made something very similar to that, and yes it was indeed yummy.

Ever since discovering that A) the local produce market often has fresh tomatillos for cheap; and B) how good they are in Tex-Mex style dishes, I've been making a point of cooking with them semi-regularly.

I'd even buy real Hatch chilies, but the minimum order is 5lb. That's a lot of pots of chile.

Oh man that sounds great. Once this whole lockdown thing is done I'll try it. So can you do a 1 to 1 with Tomatillos to Tomatos?
