Still avoiding the evils of carbohydrates!

Fave breakfast thing (I often skip it because I'm no longer hungry in the mornings) is an egg muffin w/tea. Just an egg whisked w/chopped salt ham or bacon and cheese cooked for ~15 minutes at 375 in a single muffin cup (grease it first, I use lard). I usually do a half-dozen at a time since they keep really well and are tasty cold (1/2 cup each of meat & cheese for six eggs). I've done Cheddar, feta, Jack, and Colby (only the best old tangy stuff to complement the pig, which is aged Colby from Pine River Dairy in WI). Feta is the best so far because it's got enough funk to stand with the hypersalty cured pig (and is salty itself). Blue would be good. Handy to eat on the go.

Speaking of cheese, got another Cowgirl Creamery treat. I'm into the Wagon Wheel now: mild, only vaguely tangy, but far too moreish. Devilishly so. I do wish they'd sell single cheeses.

Okay, it may have technically been a BST, since the greens were mostly spinach.  It was still delicious.  The only other ingredients were mayonnaise and bread.  I cooked the bacon on a wire rack in a 400°F oven for 22 minutes.

Not eating it yet, but prepped the turkey for tomorrow. ~16 lb. turkey is spatchcocked* and dry-brined, overnighting in the fridge in preparation for tomorrow.

* If you're not familiar, it's a method of butterflying, explanation/recipe/instructions at Serious Eats. Tried it for the first time last year, cooked a 14 lb. bird to perfection in 1 hour 45 minutes.

Never got into the steak for breakfast thing; the closest I get is an omelette with bits of steak in it (and even that not so much any more, what with the gout).

Just had some fried tofu for breakfast...

It's both delicious and healthy! Insert blather about LCHF living, the (un)soundness of the various studies underpinning our government's dietary guidelines (n.b. the reproducibility crisis), etc ad nauseam.

On-topic: speaking of corned beef, I got two full packer briskets recently (went in on pieces of a whole cow) and have been slow-cooking a lot. I am not great with grills but with expert help I managed to smoke an 18-pound brisket (!!!) for 9 hours (felled somebody's old lightning-struck shagbark in return for the wood) and I didn't trim any of the substantial fat caps off beforehand. It's all fabulously moist and I didn't syringe it at all (that always strikes me as more than a bit creepy). I always suspected the syringing fad was because of irrational satfat fear resulting in excessive trimming (and/or too much heat) but now I've got my findings...

I've had it with dippy eggs on top (the best way) and with au poivre-style peppercorn sauce made from its own crust and drippings (close second) and in omelettes and egg-wraps and just plain cold from the fridge. Only salt, black pepper, red pepper flakes & garlic in the rub. The crust is nearly orgasmic, and together with the flavor of yolk is just... just perfect. The best optional veg accompaniment so far was my own habaneros charred w/the aid of the aforementioned tallow.

BRISKET!

God, now I want some hot diner hash and hideous black coffee. I do miss carbs sometimes. I have a cheataganza coming up... maybe somebody can recommend a good greasy spoon in the Midwest in which I can scratch this hedonic itch? If not it'll be the Steer-In. Or maybe Peppy...

Random commentary: not long ago I went to McDonald's and ordered some abattoir slurry patties between coagulated cream cultures and bleached grass puffs. It was quite alright. Just meatish things and processed cheese and flavorless white bread. With copious salting, the meat was very palatably beefy! I like that they still provide popcorn-style powdery salt in the weird double-tubed packets (and isn't it satisfying to crack the perforations on those?). That's the best sort of salt for a proper smash-burger.

I'm having the urge to eat some Native American pemmican and maybe in some rubbaboo stew or even fry it with some onions and other veggies. Has anyone eaten the stuff? And no I'm not talking about jerky which is a totally different food.

"Hanoi-style" pork bun cha. I asked the pretty girl (she speakum English!) for both noodles and sticky rice, though. Plus the usual Coke.

Chicken tenders at the Buffalo Wild Wings in the Houston airport. Was unable to avoid a 2.5 hour layover so I'm making the most of it.

Surprisingly, the tenders are cooked perfectly: the breading won't grease a napkin while the chicken is soft and juicy inside.

I usually get the naked tenders with one of the seasonings instead of a sauce. Surprisingly gentle on the calorie budget.
