...Offline gaming has taken a back seat to online games...

Offline gaming is thriving! Sure, it doesn't garner the same levels of obsessive mainstream mass-coverage as the endless raft of "e-sports" events, but that's "sport" for ya.
I've barely touched an online game in years, as my backlog of amazing offline single-player experiences is immense, and ever-growing.

Recently, I've played "The Sexy Brutale", which is a fantastic mix of Clue(Cluedo), point'n'click adventures (but realtime), and Groundhog Day. Hugely recommended, and available DRM-free on GOG.

I've also personally placed "Rain World" on my all-time-top-10 list... although it's certainly not for everyone. Incredible deeply-simulated game with amazing potential for emergent situations. You will die a lot, and a lot of people find it hard to accept that you don't "progress" in a typically gamey sense... you have all the abilities you need at the start of the game, and you need to put in a good 10-20 hours exploring, learning and practicing to actually train yourself to be able to survive. Only play if to you, exploration and discovery are their own rewards, and you aren't the type to rage-quit because you expect your games to be "fair". It's an incredible experience if you're willing to give it the time and patience it deserves.

The sexy brutale is on my list of games to check out, but I've never heard of rain world. You sold it pretty well to me with saying that it's hard. I love hard games, but they are so rare these days.

By offline games does that mean no Steam? I ask because games like Civ 5 and Civ 6 can be played single player but require Steam. I'm playing Skyrim and really enjoying that, even though its a few years old.

You can play games purchased with Steam in offline mode. As long as you have the game downloaded and are ok with progress/achievements possibly not being saved, you can play it without an Internet connection. There may be some games that you cannot paly in offline mode, but I personally haven't run into any.

Relatively recent games.

Total War Series
Civilization Series
Galactic Civilization Series
Pillars of Eternity
XCOM
Cities Skylines

As you can see, I tend to like a certain style of game.

Agree with many of the previous comments, but both offline and multiplayer and co-op (including with fellow gerbil Nanoflower, who lives in my city), Borderlands 2 has probably brought me more fun, stupid joy than just about anything I've played in 16 years. Simple, profane, dumb, over the top--it's as if the game was tailored to my personality.

Has anyone played the new-ish Wolfenstein games? New Order or Old Blood. Are either worth checking out. If you had to pick one, which is better?

TNO > TOB, IMO, and it's twice as long a game.

Subnautica and Outer Wilds are two especially great games. If you haven't played them, I recommend you play them immediately.
