It may be open ended but I think I can relate to Astra. Offline gaming has taken a back seat to online games. To the OP's question, I'm a fan of FF XV when I have more time, Geometry Wars 3 when I only have a few minutes or the kiddo wants to play a game with me.

This is incredibly subjective.

For example, 5 and a half years after it was released I'm still playing Skyrim (I've gotten hooked on role-play playthroughs). OTOH, one of my best friends got bored of it 3 weeks after it was launched and hasn't opened it since.

Very much a YMMV question.

Almost forgot. Overlord is old but nice enough game, brought it Sunday along with Planscape: Torment EE.

Offline gaming is thriving! Sure, it doesn't garner the same levels of obsessive mainstream mass-coverage as the endless raft of "e-sports" events, but that's "sport" for ya.
I've barely touched an online game in years, as my backlog of amazing offline single-player experiences is immense, and ever-growing.

Recently, I've played "The Sexy Brutale", which is a fantastic mix of Clue(Cluedo), point'n'click adventures (but realtime), and Groundhog Day. Hugely recommended, and available DRM-free on GOG.

I've also personally placed "Rain World" on my all-time-top-10 list... although it's certainly not for everyone. Incredible deeply-simulated game with amazing potential for emergent situations. You will die a lot, and a lot of people find it hard to accept that you don't "progress" in a typically gamey sense... you have all the abilities you need at the start of the game, and you need to put in a good 10-20 hours exploring, learning and practicing to actually train yourself to be able to survive. Only play if to you, exploration and discovery are their own rewards, and you aren't the type to rage-quit because you expect your games to be "fair". It's an incredible experience if you're willing to give it the time and patience it deserves.

The games on my best-of list are a couple years old since I don't get to play as much as I used to, but they should be cheap to buy and they have good single player campaigns IMO. Off the top of my head and listed in no particular order:

Tomb Raider and Rise of Tomb Raider
Portal 2
Bulletstorm
Dishonored (I haven't played Dishonored 2 yet, but probably just as good)
Civilization V (maybe Civ6 also, again haven't played Civ6, but Civ Beyond Earth was garbage)
Bioshock Infinite

True story, single player gaming hasn't been as good as it is now in at least 15 years. I couldn't even begin to answer the OP's question without more information to narrow down which genres and playstyles to focus on.

Obviously totally subjective, but for me it's Civilization IV. I can always pick up where I left off or just start a new game and my W10 tablet can run it for at least 4 hours in offline mode with brightness turned down (as usual). I'll play that when I'm traveling (plane, hotel) and can't count on a fast computer or fast internet connection.

FTL and Bastion, to name a couple I don't see here yet. Both are truly masterpieces, and I'd highly recommend either to gamers of any persuasion.

I've got a lot of other picks, but Portal 2 may be the only other one I would consider so perfect.

Witcher 3
Stellaris
Most any Elder Scrolls game
Mass Effect Series
Just Cause 3
Dawn of War (1 or 2, both are great)
Space Marine had a great Story but replay value is low until you go online
Rebel Galaxy ($20!)
Neverwinter Nights 1 and 2
X-Com (Old and New ones)
Gal Civ 3 (DLC heavy...)
Civ 5 (Expansion/DLC heavy)

These are just a few I pulled from my Steam list.

The Total War series has eaten vast chunks of my life. Warhammer TW is the latest version, and utterly awesome.

Brian Reynolds' Alpha Centauri. The best Civ game wasn't technically a Civ game.

Another vote for Stellaris, which is nothing like a Civ game but is quite good in its own way.

Heads up guys, the Saints Row games have a major discount on Steam with Saints Row 2 being free for limited time. Now while I have had Saints Row IV for a while now, I haven't gotten around to playing it yet.

Stellaris if you're into grand strategy games and space themes, its fantastic. The Witcher 3 if you haven't played it yet, it was a truly amazing experience and right in the mix for my top 3 favorite games ever. It's two expansions, especially Blood and Wine, are also some of the best gaming ever.

I have GOT to get into the Witcher series! I think I bought the 1st on a Steam sale, but I'll have to check tonight.

By offline games does that mean no Steam? I ask because games like Civ 5 and Civ 6 can be played single player but require Steam. I'm playing Skyrim and really enjoying that, even though its a few years old.

The original mass effect series with DLC's is still some of the best gaming money can buy. The new ME is no good, at least as far as I've gotten.....

The remastered Bioshock was a hoot to play through again. For the last several years I've wanted to go through the original bioshock, but for whatever reason, the game would only stream one audio track in game at once with the old engine, which made sounds constantly 'clip'. Ruined the game, but no longer.

Half-life 2 is still my favorite game on PC.

Mafia 2.

Witcher 3.

The Souls games and bloodborne for various values of offline/single player. They work great offline, but being online/single player(as opposed to actual multiplayer) does add a bit to the experience in the form of sticky notes from other people.
