Back to the original question of true 8-bit CPUs:
6502 and 6809 because of their simple and elegant design. Z80 because of its complexity (which, like Intel CPUs to follow [yes I know the Z80 wasn't Intel], were largely throw-in-the-kitchen-sink designs). Depends on what you were looking for in your CPU.

Well the Z80 was a greatly improved i8080 CPU...

Greatly improved, yes, but not by Intel. And "greatly improved" by just throwing the kitchen sink at it. Then again, throwing stuff together haphazardly might also describe the 8080 and 8086/8088 as well. Regardless, they worked, and got the job done.
