More is better, but it all comes down to what games you're talking about.
It depends more on the assets of game in question.
Textures and model complexity is what really drives up VRAM consumption. Resolution has a weak influence on it. 8GiB is going to be a sweet spot for next couple of years since PS5/Xbox Series X are going consuming that much for their graphical content (They have a 16GiB shared pool which needs room for non-graphical assets) . You only need more if you want to AA/AF or utilize third-party texture mods.
