Hello. Do you know any software that is specifically for file encryption? Not full hard drive encryption like VeraCrypt or BitLocker, but just for specific files. So far I've only found NordLocker that fits this description, other programs that I've found are specifically for cloud storage which isn't exactly what I need. I just need some security on my laptop without too much technical overhead. Please let me know if you have any suggestions or recommendations.

You could use Winrar to create encrypted archives with a pretty long password.

For a 16 character password using a combination of any character, it says 103 years. I think that should be good enough for you.

I use Cryptomator on my Google Drive. It works sort of like Veracrypt in that there's a container, but it's not a fixed size and will grow (and maybe shrink) as you add and remove files.

In a pinch, just use 7-zip with password and AES. Works fine as well.

There are many free encryption software like VeraCrypt, AxCrypt, Folder Lock, AES Crypt, Bitlocker, and Cloudfogger you can try these.
