Acronis – raid 1 – Windows 2003 server

I have a 5 year old Intel Xeon motherboard server running with raid 1. I have Acronis true image echo server installed. One of the mirrored drives has failed. They are both past their prime and should both be replaced. The question I have is if I put both new drives in, go into the bios and create the raid 1 on two blank drives, then reboot off of the recovery cd, will I be able to restore the two partition from the image backup and successfully boot?

No changes except two new hard drives.
Already setup and running (at least it was) raid 1.
The raid has two partitions – a C> boot drive and a F> data drive.

Also this is an exchange server and the image was made while windows is running. Would I have better luck booting off the restore cd and making an image while Windows is not running to get a “cleaner” backup?
