Windows 7 Pro to Ultimate Upgrade

Unfortunately, I need to upgrade a workstation from Windows 7 Pro to Windows 7 Ultimate to gain access to Bitlocker capabilities. I know Windows 7 has that anytime upgrade where you can transition it to a higher version but I've never done it before. The applications only currently work with Windows 7 otherwise I'd just upgrade to Windows 10 Pro. My question is will it wipe all the data or will it just do a quick adding of features?
Intel i7-7700, MSI Trident, 32GB DDR4 2133mhz, Geforce 1060GTX, and Samsung Evo 1TB.

Are you required to specifically use Bitlocker or would another disk encryption program do?

Our other option is Sophos Safeguard but it doesn't like the hardware configuration because of how new the system is :(

I believe bitlocker is an in-place enable/disable sort of thing even on Windows 7. The one time I tried it out was on Windows 10 and it let me save my encryption key to the cloud somehow. Not sure if it's like that on 7 too.
