If you like Macaroni Cheese (or cheese sauces in general) but hate the hassle of making a Roux (or the resultant heavy not-so-cheesy flavour) for the normal Bechamel + cheese sauce route: look up Sodium Citrate. It’s the emulsifier used to create ‘processed’ cheeses, but if you stir a small amount into warmed milk then mix in your cheese (by weight: 49% milk, 49% cheese, 2% Sodium Citrate) you prevent the fats in the cheese from separating when melting and going out of emulsion, and get a SUPER smooth and cheese sauce without needing to add flour.
Heh… Sodium Citrate spells “Na C H O” =)
Thanks for the tip. I don’t find roux that challenging with the right blend of cheeses (my cast iron mac uses a brick of Philadelphia cream cheese), but I have broken a few sauces, and that might be an easy application for a weeknight mac.
