Impressive the way the clock was, ah, sequenced.

So here’s a number I choreographed just for this occasion:

If we’re discussing stuff from Bon Appétit, I made their “Adult Macaroni and Cheese” recently, and I can endorse that recipe. Pretty easy for a lot of flavor. Link:

Side note: does anyone have a crash course in how to format things in the new comments? I can’t even do trial-and-error because I don’t have an edit button.

If you like Macaroni Cheese (or cheese sauces in general) but hate the hassle of making a Roux (or the resultant heavy not-so-cheesy flavour) for the normal Bechamel + cheese sauce route: look up Sodium Citrate. It’s the emulsifier used to create ‘processed’ cheeses, but if you stir a small amount into warmed milk then mix in your cheese (by weight: 49% milk, 49% cheese, 2% Sodium Citrate) you prevent the fats in the cheese from separating when melting and going out of emulsion, and get a SUPER smooth and cheese sauce without needing to add flour.

Heh… Sodium Citrate spells “Na C H O” =)

Thanks for the tip. I don’t find roux that challenging with the right blend of cheeses (my cast iron mac uses a brick of Philadelphia cream cheese), but I have broken a few sauces, and that might be an easy application for a weeknight mac.

I’ll never look at nacho cheese the same way again. 🧀

Oh, wait. He is actually sitting on a regular tennis ball, in a stadium seat.

or a regular tennis ball with a really tiny person on it.
